Ingredients

1 teaspoon sugar
1 cup sugar
1/2 cup lukewarm water
2 packages active dry yeast
3 cups skim milk
2/3 cup lard, melted
1 tablespoon salt
2 eggs, lightly beaten
8 1/2 cups Natural White Flour

Directions

Dissolve 1 teaspoon sugar in lukewarm water. Sprinkle yeast over liquid and let rise in warm place for 10 min. until foaming. Scald milk, remove from heat, and add melted lard, 1 cup sugar, and salt, stirring to dissolve. When cooled slightly, add eggs and yeast mixture to milk mixture. Slowly add the flour, adding more as needed to keep the dough from being too sticky. Shape dough into a ball and place in a lightly greased bowl. Cover with plastic wrap or towel. Let rise in a warm place for about 1 hour. Punch down dough and knead for 2 min. Let rise again until doubled in size. Pinch off balls of dough about the size of an egg. Place on a greased baking sheet 1 1/2 inches apart. Let rise 30 min. Preheat oven to 375. Bake buns in a 375 degree oven for 15-20 min, until golden brown. Makes about 5 dozen buns.
