Whole Wheat Soda Bread
Ingredients
1/2 cup Natural White all purpose flour
1/2 cup Prairie Gold whole wheat flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon milk
1 tablespoon honey
1/2 cup plain lowfat yogurt
1 tablespoon cornmeal
1/3 cup peach jam
Directions
Preheat oven to 400 degrees.
Combine first 4 ingredients in a bowl and mix thoroughly. Combine milk, honey and yogurt in another bowl and mix thoroughly. Stir milk mixture into dry ingredients until just moistened. Transfer dough to a lightly floured work surface. Knead lightly 3-4 times. Form dough into a ball and transfer to a lightly oiled baking sheet. Sprinkle with cornmeal. Roll dough into a 2 inch thick circle. Bake at 400 degrees for 20 minutes or until bread sounds hollow when tapped.
Cut into wedges and serve with jam.
