Whole Grain Pancake Mix
This mix is remarkabley easy to use!
4 Cups Wheat Montana Prairie Gold Whole Wheat Flour
1 Cup Wheat Montana Natural White Flour
3 1/2 Cups Wheat Montana Rolled Oat cereal
3 Tbl sugar
3 Tbl baking powder
1 Tbl salt
1 Tbl baking soda
1 Cup vegetable oil
To make Mix:
Grind oats in food processor until chopped fine, but not powder.
Put flour, oats, and other dry ingredients into mixer with paddle. Mix on slow, and drizzle the vegetable oil into the bowl slowly with the mixer is running.
Sote in an airtight container for up to two weeks at room temp. or indefinitely in the refigerator or freezer.
To make pancakes:
Whisk together 1 cup of mix, 1 cup of buttermilk (you can use soured milk, or ambinatio of half plain yogurt and half milk also will do), add one large egg. Don't worry if it seems thin at first; the oats will soak up the milk, and the mix will thicken a bit as it stands. Let the batter stand for at least 20 minutes before cooking.
Heat lightly greased griddle to 350 degrees or medium-hot.
Drop the batter onto it in 1/4 cupfuls to make a 4" diameter pancake.
When the edges look dry and bubbles come to the surface without breaking (after about 2 min.) turn the pancake over to finish cooking, which will take about 2 min.
Serve pancakes immediately, or stack and hold in a warm oven.
