Maple Chiffon Cake

Ingredients

Beat very stiff. Then transfer to glass or metal bowl:
1 cup (approx. 8) egg whites
1/2 tsp. cream of tartar

In mixer bowl, beat:
1 1/4 cup freshly ground pastry wheat
1 1/4 cup Natural White Flour
2 5/8 tsp. baking powder
1 tsp. sea salt
Add in order to flour mixture:
1/3 cup olive oil
1/2 cup maple syrup
5 egg yolks
3/4 cup cold water

Directions

Pour batter over egg whites. Fold gently.

Pour into ungreased ""Angel Food"" cake pan. Bake in preheated 350F for 1 hour. (Should be dry to touch and springy.) Invert. When cool remove from pan and frost.

Golden Butter Frosting: Melt 1/2 cup butter in saucepan over low heat until golden brown. Remove. Place 4 cups powdered sugar in mixer bowl. Beat in butter. Add 1 tsp. maple flavoring. Blend in enough light cream, about 1/4 cup, to make spreading consistency.
