Sweet Potato Pound Cake
Ingredients
1 softened butter
2 cups maple syrup
2 cups mashed sweet potatoes
4 eggs
1 tsp. vanilla extract
Then add:
3 1/4 cups freshly ground Prairie Gold flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
Directions
Pour batter into a 10 inch greased and floured bundt pan. bake at 350 for about 1 hour and 20 minutes. Serve with whipped cream. If desired, glaze with 1 cup confectioners’ sugar, 5 tsp. orange juice and 2 Tbsp. grated orange zest.
