Spelt Whole-Grain Bread
3 cups plus 2 tablespoons Whole-grain spelt flour divided
2 tablespoons honey
2 cups warm water
1/2 teaspoons dry active yeast
2 cups rye flour
1 cup rolled oats
1 tablespoon + 1 teaspoon Non-aluminum baking powder
2 teaspoon baking soda and 2 tsp sea salt
2 whole eggs or egg substitute
2 tablespoons sesame seeds
1)Preheat oven to 325 degrees F. Coat loaf pan with non-stick oil, sprinkle 2 tablespoons spelt flour around pan.
2)Combine honey and water in 2-quart bowl, sprinkle yeast over the mixture. Set aside for 5-10 minutes.
3)In a 3-quart bowl, combine remaining 3 cups spelt flour, with rye flour, oats, baking powder, baking soda,and salt.
4) Beat the eggs into the honey mixture. Slowly add the honey mixture to the flour mixture and mix until dry ingredients are well moistened.
5) Place in prepared pan. Sprinkle with sesame seeds, press into dough with back of a spoon.
6) Bake for 1 hour and 5 minutes or until toothpick comes out clean. Allow the bread to cool in the pan for 10 minutes. Remove from the pan and continue cooling on wire rack.
